Easy Garlic Lime Shrimp

A lot of times on the weekend I just want to eat.  I don’t want to spend hours in the kitchen preparing elaborate meals, so I love making shrimp.  It cooks fast and you only need to marinate it for a few minutes for the flavors to steep in.  Feel free to add whatever you have in the kitchen, this is what I had on hand.


1 lb of Large Gulf Shrimp, peeled and deveined

2 cloves of garlic, peeled and chopped,

1 lime, juiced,

1 tbs of evoo

salt and pepper to taste

(I would have added 2 tbs of cilantro but I didn’t have any on hand)


Peel and devein the shrimp if it hasn’t already been done, I got mine at the farmers market so I had to do this step.

Add all ingredients to a bowl and let marinade for about 10 mins

Heat up a cast iron grill pan to medium heat. Add shrimp and cook for 2 to 3 mins, then flip and cook on the other side.

Done!  See super easy!  I ate these with roasted tomato cauliflower and some sauteed red chard.
