Pineapple Shrimp Scampi (UPDATE)

Sometimes you just need to revisit an old recipe and update the pictures.  So this is not a new recipe, just an update and a few tweaks. I found that the chicken stock is not really necessary, the pineapple, butter, and lemon provide enough liquid for this dish to cook and taste great. Also I really like to serve this over cauliflower rice.

Ingredients:

2 tbs coconut oil

2 lbs of shrimp, peeled and deveined (I used fresh wild caught gulf shrimp)

5 tbsp of grassfed unsalted butter (I prefer the taste of butter, but ghee would also be acceptable in this dish)

1 medium sized onion, diced

6 cloves of garlic, minced

1 lemon juiced

1 cup of diced pineapple, plus any juice remaining (used store bough, already chopped pineapple)

3 tbsp of fresh parsley chopped

salt and pepper to taste

Directions:

Melt coconut oil in a skillet on medium heat.  Add the shrimp and cook about 2 minutes on each side, until shrimp are pink. Remove from skillet.

Add butter to skillet and melt.  Add in onions and saute until translucent, about 5 minutes.  Add in garlic and saute for another minute.

Add in lemon juice, salt and pepper, and pineapple and cook for another 2 minutes.  Add back in the shrimp and coat with butter sauce to reheat.

Garnish with parsley and serve with cauliflower rice.

Pineapple Shrimp Scampi

Have I mentioned that I love shrimp.  It is such an easy and fast meal to prepare. I whipped this one up in a matter of minutes and enjoyed every buttery bite.

Ingredients:

3/4 cup of chicken stock

1 lemon juiced

1 cup of diced pineapple

3 tbsp of fresh parsley chopped

salt and pepper to taste

Add butter to skillet and melt.  Add in onions and saute until translucent, about 5 minutes.  Add in garlic and saute for another minute. 

Add in chicken stock, lemon juice, and salt and pepper and simmer for about 5 minutes until the sauce has thickened slightly.  Add in pineapple and cook for another 2 minutes.  Add back in the shrimp and coat with butter sauce to reheat.  Add in parsley and give the shrimp a quick stir.

Easy Garlic Lime Shrimp

A lot of times on the weekend I just want to eat.  I don’t want to spend hours in the kitchen preparing elaborate meals, so I love making shrimp.  It cooks fast and you only need to marinate it for a few minutes for the flavors to steep in.  Feel free to add whatever you have in the kitchen, this is what I had on hand.

Ingredients

1 lb of Large Gulf Shrimp, peeled and deveined

2 cloves of garlic, peeled and chopped,

1 lime, juiced,

1 tbs of evoo

salt and pepper to taste

(I would have added 2 tbs of cilantro but I didn’t have any on hand)

Directions

Peel and devein the shrimp if it hasn’t already been done, I got mine at the farmers market so I had to do this step.

Add all ingredients to a bowl and let marinade for about 10 mins

Heat up a cast iron grill pan to medium heat. Add shrimp and cook for 2 to 3 mins, then flip and cook on the other side.

Done!  See super easy!  I ate these with roasted tomato cauliflower and some sauteed red chard.
